Ted and his buddies in Idaho

Ted and his buddies were visiting Teton Valley for the first time.

Of course we had to create a menu that not only was a taste of Idaho but created a story about Teton Valley, Idaho. We cooked a three course meal and dessert for a cozy in home night. To start, Apres skiing Fondue, we served it was some toast and blanched broccolini. Then, the arugula, orange + beet salad simply dressed with a light seasame, garlic, and ginger. The main course was Elk Steak rounds from the hunting season before, a heaping pile of Idaho potatos, mashed with parsley and garlic and just a red wine reduction to glaze over the top. Voila!

Finished with a Chocolate Tart and a scoop of Huckleberry ice cream!
